This recipe is an adaptation for Instant pot of a classic French recipe, coq au vin (old chicken in wine, nowadays any chicken).
Revert to that instead of tinkering with the instant-pot instructions.
Basically saute or brown the chicken and the aromatics, then braise about 40 minutes, make a sauce and serve.
