I have a question about the recipe "Lemon Curd" from Alice Medrich. If I used meyer lemons, should I decrease the amount of sugar? (If so, how much do you think?) Thank you!
I wouldn’t reduce the amount of sugar at all. While Meyer lemons are “sweeter” than eureka lemons, they are still tart. I have a Meyer lemon tree and usually don’t need to reduce the amount of sugar to recipes.
I tend to like my desserts on the less sweet side and I do reduce sugar when I use Meyer lemons. For that recipe I would probably use about a tablespoon less than what is called for. Good luck!
