I have a question about the recipe "Pan Seared Pork Belly" from mrslarkin. Does this belly have the skin on?
Hi Lila. I don’t think this belly had the skin on.
Since the recipe directs you to turn the pieces fat side down to sear, rather than referring to it as the skin side, I'm assuming it would have to have the skin removed. That would be the best way to crisp and render some of that fat.
