A question about a new ceramic non stick pan? Olive oil or not?

I just bought a Green Pan ceramic not stick pan, was excited about using it but in reading the instructions found a warning not to use extra virgin olive oil. I am concerned about this as i try to use EVOO as much as possible. Any experience with EVOO and ceramic non stick pans?

More than happy to clarify here—I also use EVOO a lot when cooking! It is entirely safe to use olive oil when cooking with your GreenPan. That said, I would avoid using EVOO or low smoke-point oils when using this pan (or any ceramic nonstick pan!) for high-heat cooking or frying. For that we suggest high smoke-point oils (like grapeseed or avocado oil) — these are much less likely to burn or decrease the nonstick properties of your pan.

Thanks so much for your question - happy to provide a little insight here! For long-lasting performance, we recommend you use your GreenPans on low to medium heat settings with a few drops of high smoke point oil. If you're using EVOO for the health benefits, or are looking for an alternative to vegetable or canola oil, I'd recommend avocado oil as it has a much higher smoke point than EVOO. So the concern would seem to be for the oil, not the pan.
