I have a question about the recipe "Clear Wonton Broth" from Mark. What brand of kosher salt and msg do you use? Kosher salt brands vary in weight and some MSG products have salt. I suspect your restraunt may have used the asian chicken granules that have these ingrediants. Also there are 3 unami ingreditents 9 parts salt to 1 part monosodium glutamate to .1 parts disodium guanylate and disodium inosinate plus sugar :). Thought I would share as well to help you in your quest for perfect soup base.
