How long can coleslaw be kept in refrigerator mixed with mayo.?

Well, it depends on if you want it to be decently edible, or just safely edible I suppose. It also depends on the acidity of the dressing. Coleslaw is obviously best eaten the day it is made, because the dressing will cause it to break down into mush as time goes by. Once upon a time I did actually read a microbial study done on coleslaw, comparing pre-prepared versions from the store and deli, and homemade versions made with commercial coleslaw and homemade dressings. I seem to recall it technically lasted over a week- although it wasn't tasty or appealing because the cabbage tended to disintegrate. Personally I don't keep it more than a day or two at most. After that it's generally not worth eating.
