You mention lemony ginger crumble...how would you recommend adding lemon?

The author may yet chime in; personally, I'd probably add some fine lemon zest to the crumble. I suppose you could use lemon juice with the jam, but that's getting awfully acidic.

I just baked the cake, and i zested a whole lemon and just added it into the batter with the flour. Very mild flavour, could even do more. :)
