You can get 'accent' flavor enhancer at most stores. It's msg.
I love the taste of kewpie mayo. It's very close to what's used in Europe on fries. I always just buy it tho. Shaitaki or other mushrooms, or Kelp; Dried and powdered in a grind might sub. (or maybe soak kelp in the vinegar and use the vinegar).

I don't have a recipe, but a little research on wikipedia yields this:
"It is made with egg yolks instead of whole eggs, and the vinegar is a proprietary blend containing apple and malt vinegars."
My guess is you'd get something fairly similar to kewpie if you follow a traditional mayonnaise recipe, using egg yolks instead of whole eggs, and a combination of apple cider and rice vinegars. I believe kewpie is also known to contain a small amount of msg, which you can buy at most international markets. (Though personally I'd be pretty careful using msg in anything.)
