I also put beer in my chili. First saute chopped onions and maybe a few red peppers, then add the ground beef, and add diced tomatoes along with a bottle of beer (Corona is usually in the fridge). All the spices go in, and then whatever beans I have in the house. More liquid may be needed, and that can be either tomato sauce or water. If the chili needs thickening, I add a little masa.

Everyone forgets the Roaster when it come to slow roasted in beer. The usually suspects (carrots, onions, celery and galric) chunked and added with a bottle or two of really good lager (dark if can get)(honey roasted would be great). On a low 250F oven for 3 hours, braise that chicken until it just screams....I am done!!!
You need nothing more than mashed roasted garlic potatoes and maybe some roasted cauliflower (beer and cauliflower are a natural together if you did not already know this). Make sure you have a good local brewed beer with a honey base. Enjoy!!

My Mom used to take a whole ham and pour a bottle of beer or 2 over it and let it slow cook all day. Really, really delicious.

Carbonnade is outstanding. I really love this easy (albeit not quick) choucroute: http://www.seriouslygood.kdweeks.com/2010/10/choucroute-2.html

Not sure if you mean made in a slow cooker or just slow cooked in the oven, but I love Carbonnade Flamandes (Belgian Beef and Onion Stew with Beer) Here is one: http://simplyrecipes.com/recipes/carbonnade_beef_and_beer_stew/
