Accompanying sauce recipe for roast?

In the photo, there’s a creamy-looking sauce beneath the roast. What is that?

That's just the thickened glaze which is added at the last part of the cooking process. It has coated the meat, and rubbed off onto the board during the cutting. The rest is probably what is in the small pitcher at the top of the photo. It's thickened with cornstarch, and that's why it looks so thick and creamy.
