Can I use a pasta machine to stretch the dough in step 6? Thanks!

Maybe for part of the stretching, but you need to make a big flat piece, probably wider than most pasta machines.
So you may need to proceed with a rolling pin or the standard fill-in (wine bottle).
Last, maybe two pieces in the pasta machine, lay them side by side, and pinch together to make a larger flat sheet before proceeding to next step.

Thanks. I don't need to fill in for the rolling pin: my kitchen is over-equipped, but I could use a fill-in to do the actual rolling by hand; I'm recovering from elbow surgery. I guess I can wait a few months to make this.

PS Do you have a friend who likes to cook? Invite one for dinner and to sing for his/her supper (or in this case, roll instead of sing).

I was planning on making this for sabbath lunch for my son's upcoming bar mitzvah, and I was hoping (like the real kubaneh) to bake it overnight at 200. I have 47 family members and friends coming for the sabbath (and meal), while better them singing than me (two are part-time cantors), none of them likes to cook enough to make kubanah for a crowd. In any case, they would likely need elbow surgery afterwards too!

(FYI, I sustained the tennis elbow injury making homemade puff pastry for 400 burekas for my nephew's bar mitzvah a while back.)

Seth - is there a lesson in here? (E.g., caterer is cheaper than surgery?)

No lesson. First, I'm an obsessive compulsive perfectionist. :)

Second, surgery was covered by insurance. And I had no idea one could get an injury rolling puff pastry. In any case, the kosher caterers within the price range in my area are mediocre. It's supply/demand; there is a captive audience that won't go elsewhere, even for better quality and lower prices.

There are some high end, quality, caterers in large cities with large kosher communities, but not in smaller communities (again, supply/demand), especially because private schools place financial stress on families.

Ok, so with your insurance and local K caterer, my equation was wrong.
I know there are kosher packages of puff pastry you can order on line.
Maybe the recipe can use them and eliminate the rolling.
Not exactly the same, but close.
