A call for recipes - ALMOND FLOUR

I am a lucky duck and inherited 10 pounds of almond flour for free - i've made several items from the Rose Bakery cookbook, which I love, but would love to get some expert opinions on what else to use it with. I absolutely love the stuff and would eat it by the handful, so unique ideas are certainly welcome :)

And, I keep my ground nuts in the freezer -- easy to access and protected from going bad (rancid). Another possibility is to use them like bread crumbs, like in meat loaf.

I've made these recently and love both of them. The muffins specify pecans but I subbed the almonds. If you graze the recently gluten free recipes, you'll find a good number with almond flour or almond meal. And I think you can search by ingredient on the site.

This Orange-Almond Tart by Dorie Greenspan (Around My French Table cookbook) is phenomenal. It takes a bit of time, but it is well worth it. Also, you can use almond flour to make any type of frangipane...pear, apple, berry, the list is endless....

If you enjoy seafood you may like to try Zarzuela de Mariscos. I add a lobster cut up to mine. Use the almond flour in place of the meal. Here's a nice recipe for it:

I use it all the time for gluten free baking. I have recipes on my blog, and another blog I like called Elana's Pantry also has many almond flour recipes (the author of that blog, Elana Amsterdam, wrote The Almond Flour Cookbook).

I use it instead in place of flour for breading (things like fish) and I love it as an addition to pastry dough for tarts. Ten pounds is a lot! I'd keep it in the freezer.

Biscotti comes to mind. I also make a puff pastry tart with a organe-almond paste, but that doesn't use up a whole lot of almond flour.
