Sure hope you can get to me BEFORE Thanksgiving! I'm hoping I can make this Milk Bread in my Pain de Mie?-would it still use egg wash?

Love this recipe!!! Are you referring to a pullman loaf pan with the sliding lid? Definitely could use the bottom pan section... but personally I would not use the lid. This is a beautiful impressive crowned loaf and the recipe makes 2 loaves, using 9x5" pans. Or you can make dinner rolls as per the recipe, just not sure of the amount of dough or how it would turn out in a pullman loaf pan.

You can bake this in a pain de mie pan. You do not need to do the final egg wash, either. In fact you wouldn't want to because that would make it stick to the lid. In cases where I want a topping of some sort on a loaf baked in this pan, after I put the dough into the pan for the final rise, I spray it with a light coat of water. Then sprinkle the topping on the dough, and proceed as usual. Your topping may not stick to the dough as well as you might wish, and it won't have the glossy top an egg wash produces- but it will still taste very good.
