Can I freeze raw pie dough twice? I have some disks of dough in the freezer, but can I assemble the pie, and then freeze it before baking it?

I have several sets of pie dough, formed into disks, in my freezer. Now I need to make apple pies. Can I assemble my pies, and then freeze them to be baked later? I'm not sure if the dough will suffer from having been frozen twice. The all-butter dough I've made has a very high butter-to-flour ratio (2 1/2 sticks of butter to 3C flour), in case that makes a difference. It also has 1 Tblsp of oil in it.

Hi Terri! I've never tried this myself, but I asked around the office and some think the taste and texture of the pie dough might not be ideal after refreezing (though likely safe to eat). That being said, there are a few folks on this Serious Eats thread who have done it before and say it's not a problem at all.
