I am not able to use brown rice flour or oats; can I use all sorghum or mix it with cassava?

Actually, I would opt to use cassava flour in lieu of the rice flour. It's a nice neutral flour, which actually works well otherwise to replace wheat flour. I like sorghum flour and grains well enough, but they do have their own flavor- and using more of it would affect the flavor profile possibly. However, the only way to know for sure is to simply make the loaf using the ingredients you mention.
