my brother just gave me a whole salmon he caught - what's the best way to freeze it? I plan on cutting it up in portions and freezing.

Glazing Method is great, then can be stored like IQF stuff.

If your brother goes fishing a lot...get him a Foodsaver. That's the best for storing fish frozen you get months of storage instead weeks.

Here's a tip I learned for camping..fishing etc.
Cook steaks that week..cook a couple of more...but make them a bit under done. Just charred on the outside on a grill.
Put in a open vac bag and rest and Freeze them...then vac pac and seal them. (you need to freeze first to keep the moisture in).
Then put those in the cooler for camping...they should defrost there. Then boil them a few mins to finish cooking and warm. Kinda like a reverse sous vide. Also great freezer food when you want steak, but don't want to fire up a grill that night.
