I do not have any molasses on hand. Can these cookies be made with just maple syrup instead?

Haven't tried it with this recipe, but yes have replaced molasses with maple syrup in baking and the results were good.
Taste will be slightly different, of course, but maple and chocolate and olive oil all play nicely together.
