Is there a way to substitute the rum and champagne for something else so my kids can have this?

If this were I I would add a teaspoon or two of maple syrup for the rum, then complete the rest with a lemon or orange Pellegrino. Or make an alternate drink. Lately I have been combining Monin black raspberry syrup with seltzer, garnishing with a few Luxardo cherries and mint, seems to be a hit with my step-daughter.

Great idea to use a tbsp of maple syrup as part replacement for the rum.
Made me think of other syrups with a complex taste that could fo the same. Consider:
• Silan (date syrup)
• Molasses
• Pomegranate syrup
• Barley syrup
• Birch syrup (a newish tree syrup on the market)
• Various flower or citrus syrups to echo the grassy or herbal note in some rums.
I would use 7 1/2 oz high quality pure fruit juice for the rest of the rum volume, and sparkling water instead of champagne.
