Could bonless, skinless chicken thighs be used in place of wings or drumsticks?

I certainly would! Based on the suggestion in the headnote for using drumsticks instead, I'd cut the thigh meat into pieces that are about 2 1/2 inches long. Boneless chicken always takes less time to cook than bone-in chicken, so I'd keep that in mind, too.
