I'm so glad I'm not the only one that boils chicken by covering it with water and a quick boil and turn it off. Half hour would be about right for just a breast. I go an hour in a large stock pot with 3 inches of water over a whole chicken. Perfect every time...and no more nasty dried out over boiled chicken! People think I'm joking about the technique..but it works very well.

Poach the chicken breast: Cover the chicken with at least an inch of water and/or chicken broth in a sauce pan and add a bit of salt. Cover, and bring to a boil over medium heat. As soon as it boils, turn off the heat. Leave the chicken in the covered pan for about half an hour. Cut the broccoli into florets, and steam -- about 8 minutes. Saute an onion over low heat in a mix of butter and olive oil while you make the pasta (I like rotini with this, but that's because I'm not a penne fan.) Add some garlic when the onion is just about done. Pour in some heavy cream (not UHT, if you can help it) and bring it to a simmer and let it reduce a bit. Slice the chicken into bite size chunks. Stir the broccoli and the chicken through the cream sauce, salt and pepper to taste, and serve immediately over the pasta. Other flavors to add -- mushrooms, a splash or two of white wine or dry vermouth after the garlic is cooked, leeks instead of or along side of the onion, sauteed or roasted red and/or yellow bell peppers...
