Absolutely! You can do this with most pie/galette/tart doughs. And they behave better (aka roll out more easily) when chilled. Hope your galette is great!

I used dough that was made 2 months ago and frozen, then defrosted. I not at all a pie maker, and this recipe is the bomb!
