Grass-Fed Grass-Finished Beef
I'll be making this when company's in town, but have never made a brisket with grass-fed, grass-finished beef before.
Any thoughts on what adjustments, if any, should be made?

Grass-fed beef typically doesn't require adjustments in terms of cook. It will largely impact the flavor, imparting what some folks might call a bit more of a "gamier" taste but to me it just makes it tastes like capital b BEEF.
Grass-fed generally is hard to get a higher level of marbling, so it could take a little bit longer to get the brisket fully tender without the added fat. I'd honestly just start pulling off a bit and tasting starting at an hour and add 10 to 15 minutes if you feel you need it.
