How much protein in total? I need to make some swaps!

This looks delicious! It seems like a lot of protein. I’m planning to use the seafood I have on hand (shrimp, squid) plus chorizo but no chicken. Is it possible to give a weight or cups for the total amount of protein to help those of us who need to make some substitutions?

Hi Liz!

So this is a slightly tricky thing to answer because a certain portion of the protein in this dish is in the shell so for example the 24 mussels will be ~1 lb of shell on mussels, but once removed from their shells this will result in 3 to 4 oz of mussel meat.

Assuming you are not using any shell on shellfish the weights would approximately be:
4oz mussels (1lb shell on)
4oz clams (1lb shell on)
8 oz chorizo
1.5lbs chicken drums (assuming each drum is 4oz)

All in, if you wanted the same weight of protein it would be 3.5lbs but in truth I don't think you need to match it exactly, because bone in drums add a lot of weight. I think you could go for 2.5lbs of seafood and chorizo.

This is super approximate but the good news is, I really don't think the protein amount will have too much of an effect on the cook of the rice (the star of the dish)
