Dessert contest in hot weather - ideas?

My work is having a picnic and there is a dessert contest. Right now forecasts are in the 90s with high humidity, so anything that will go off/melt is out. Any good ideas?

You could just serve it in a bowl at such a hot ambient temperature and it should be thin enough.
Fruit pie would also be a good choice.
