Pork carnitas or shredded beef with a fried egg. Or seasoned ground beef, just fried, or made into slider style patties. (Not even leafy greens? Every morning, I do 2 eggs fried in bacon grease, over a pile of baby greens or spinach, with salsa on top. Sometimes some sauteed sausage slices or bacon).

Have you ever made an herb salad? Just mix all your favorite herbs, no need to add lettuce. Parsley, basil, tarragon, green onions (or not), cilantro (or not!), maybe some chopped rosemary, etc. It's really delicious. You could top it with steak slices or pork chop slices, pork tenderloin, roasted chicken... and some olive oil, salt and pepper. (Trader Joe's has a really lovely flower pepper that has lavender, cornflower, rose and something else.)

Scrambled eggs with chopped ham or chorizo. Greek egg-lemon soup with only chicken, no rice (Avgolemono). Scotch eggs (boiled eggs encased in sausage and baked or deep fried).

Skirt steak with Chimichuri sauce, yum - maybe topped with a fried egg?

Daily, I make my husband an herbed egg white omlet. I use sage and thyme from my garden, chop up. Heat pan, with PAM spray, sprinkle home made rosemary Fleur de sal, then put in herbs, then chopped onion and mushrooms....Then your choice eggs or egg whites....We usually throw in left overs from night before if it's a meat.
