I have a question about the recipe "Grilled Mint Julep Peaches" from Stefano Coppola. The peaches sound amazing, but I'm underwhelmed at the idea of vanilla ice cream with them. Any other type of ice cream come to mind? Would ginger be too much?

I think ginger ice cream would be great, or something like burnt caramel. Or what about bourbon ice cream? (Now, that would be divine.)
