I want to make tapioca pudding with the wonderful fresh peaches from the farmers market. Anyone have a wonderful recipe for this?

I'm from Brazil and here we serve a great tapioca pudim from Bahia called "Cuscus"pronounced "couscous" like the Moroccan dish,but made with coconut and sugar.It's easy:Take 4 cups of hole milk and 1 cup of coconut milk and bring it to a boil,put the heat off and mix that with 1 cup of grated dry coconut,1 1/2 cups of sugar and 4 cups of tapioca(break the grains a little) and put some effort into it cause it must be very well mixed and fast.Put the mix on a serving bowl(must have a lid)and cover it with more grated coconut.While still warm put the lid on the bowl and cover it with two table cloths tied around it.Two hours later it's cooked and delicious.As for your peaches,you can turn them into a marmalade to serve with your "Cuscus Bahiano".
