If you are shopping in a regular grocery store in the USA what you will be buying are sweet potatoes. The orange fleshed ones commonly get called yams, but it is a misnomer. Typically the orange fleshed ones get used for making sweet potato fries, but I don't see why the pale fleshed ones couldn't be.
