A question about a recipe: Salted Pumpkin Caramels

I have a question about the recipe "Salted Pumpkin Caramels" from cheese1227. I've made these before successfully, but would prefer thicker or taller caramels. Is there any downside to using a smaller pan than called for - a loaf pan, for example, so that the caramels would come out thicker/taller. Any adjustments I should consider? Thank you.
