What spices would you use in pickled pears? I typically use cinnamon, cloves, bay and mustard seeds, but am interested in other ideas. ;o)

These will be refrigerator pickles, made with Marcus Samuelsson's Swedish 1 - 2 - 3 Vinegar (one cup white wine vinegar, 2 cups sugar, 3 cups water). I plan to serve them on Thanksgiving and in the days following. Thank you. ;o)

My hands down favorite is allspice... Maybe add a little Poire William (pear brandy) when serving?

They're simply a fruit pickle, sort of like a chutney but not as savory/spicy. I use them as I would a watermelon pickle. They're especially nice with a holiday roast, as an alternative for people who don't care for cranberries, but who like something sharp and somewhat acidic to balance all the richness on the plate. They're so good, too! ;o)

What about vanilla and nutmeg with the bay? Also coriander or grains of paradise might be nice. Ginger goes well with pears, too. Would it be crazy to add pomegranate juice or pomegranate molasses for some zing and color?

I was thinking this morning about bay plus vanilla, but I like the idea of a including a bit of nutmeg, too! The other ideas are all excellent. Am also considering star anise. I'll probably make a few different batches. They're so easy. Stay tuned . . . . ;o)
