What do you like to serve with coconut rice?

I just made coconut rice with sambal and okra, topped with cilantro and crispy shallots from Ottolenghi' s Plenty. Made a cucumber salad to offset the heat. Really yummy.

potato chips, lentil wafers (pappadum) .. or a raita, with cucumber or tomatoes.. Stirfried Green beans with split mung.. the traditional south Indian version is sometimes served with a spiced buttermilk gravy..

Any vegan recipe from the site with warm, spiced flavors -- think Thai, think Indian, think Chinese -- would be a perfect accompaniment to coconut rice!
