Kimchi fried rice w/ avocado for lunch. One of my favorite easy recipes from Julia Turshen. So good. Heat canola oil in pan, add leftover brown rice, chopped kimchi, a splash of sesame oil, chopped scallions and a splash of soy sauce. Cook for 5-10 mins until everything gets combined and slightly crunchy. Top with additional scallions.
