Boiled rice with #chicken in adobo chipotle pepper sauce. I use a quick "pulled chicken" method: sauté a couple of chicken breasts with some oil, 3-4 minutes each side, then pour in a cup of chicken stock or water and simmer for 45 minutes. Use forks to pull apart. Sauté some onions and mix it with the chicken, salt, pepper, red pepper flakes, a few crushed tomatoes, a spoon of tomato paste, and a sliced up adobo chipotle pepper (add a spoon of the sauce that comes with it if you like it extra #spicy). Some cilantro on top.
