Sauté red onion, garlic, a little tomato paste, cumin, and some leftover chipotle peppers. Throw in a can of black beans and a little water and simmer for a bit to let the flavors meld. Salt to taste and top with cheese. Served with an open face corn tortilla topped with melted cheese and avo (not pictured).
