In a large pot, or even a rice cooker, bring -5 cups water to a boil.
Ingredients (can use any vegetables!)
-add: 1 cup flax seeds+quinoa
2 small sweet potatoes chopped
1 yellow onion chopped
1 cup chickpeas
(Boil 15 minutes until soft)
-add: 1 bag cauliflower
1/5 bag Edamame
1 can Beets
(Optional) frozen catfish filet
(I use frozen & canned from TJs)
-add spices to taste:
-1 tablespoon coconut oil
-1 spoonful of nut butter
(I use sunflower seed butter)
-coconut flour to thicken
Cook/steam on high, mixing every once in a while until all ingredients are reduced to curry consistency.
Serve alone or with bed of brown rice. Garnish with toasted sesame seeds,miso, or kimchi or w/e..
Note: any of the produce ingredients can be substituted! Or anything can be added. For example, use carrots or squash instead of sweet potato. Use tofu or chicken instead of fish.
