I can't stop using the #genius steak technique I learned from Kenji at Serious Eats, which is the opposite of what I learned in cooking school. Highest heat, little neutral oil, flip every 30 seconds, till 125 degrees F inside. Sear is just as great, middle is more evenly medium rare, more error-proof. Ps. Salt 40+ minutes before if you can.

I second this technique which I learned from a steakhouse line chef. Works great for filets. Looks delicious.
