Simple meringue base made with egg whites, sugar, vinegar, corn starch and vanilla essence. Then spread with a cream, mascarpone and confectioner sugar mix. Dot with raspberries (lots), roll up and scatter more berries and pistachio. It's from #plenty and while Ottolenghi gives it a real name we just call it "mind blowing, jaw dropping, show-stopping dessert". Forever indebted to #thewednesdaychef for posting it on her blog.
