Experimental rye loaf ?. 175g rye flour, 175g wholemeal bread flour, 1/2 tsp yeast, 1 tsp salt, 280g water. Mix, rest for 12h, shape & prove in basket with sesame seeds 1h. Bake 250C in cast iron pot: 30 mins with lid, 20 mins without. Tasty! But a bit flat ?
