Perfectly poached #eggs: bring water to a simmer in a wide saucepan or sauté pan. Splash of white vinegar. Crack 1 egg into a teacup and quickly/carefully turn over into water. Repeat with other egg. Let cook a few minutes until whites plump up, remove w/ slotted spoon. Let drain on paper towel. Serve with toast!
