Yesterday's sweet potato, carrot and red lentil soup from #greenkitchenstories. Today's leftovers made for perfect baby food for Giona.
Sautée 1 large onion, add 2 sweet potatoes, 4 carrots, couple of sprigs of thyme and cook for a couple of minutes. Add 4 cups of water or stock, 1 cup of rinsed red lentils, salt and pepper. Simmer covered until vegetables are soft. Blend, serve with some olive oil and thyme leaves.
