Slice eggplant, salt, and roast in the oven until edges are crispy. In the meantime, sautée a medium chopped onion with garlic. Add chopped San Marzano tomatoes, oregano, red pepper and lots of basil. When ready, roughly chop eggplant and add to the sauce. Simmer. Serve it over pasta, top with ricotta and more basil.
