Pan-Seared Bone-in Ribeye: place a rack over a baking sheet. Liberally season steak with salt on both sides and place on prepared rack. Refrigerate at least 1 hour then let come to room temperature. Pat dry. Sear in oil in hot skillet on both sides; finish to desired temp in 350F oven on (same) prepared rack.
