This cold blast calls for a comforting bowl of Slow Roasted Chicken Soup. Hands down the best chicken soup, ever. It goes something like…
Scatter skin-on legs, thighs. and smashed garlic cloves & a yellow onion (halved) in a rimmed roasted pan. Season with salt & pepper. Roast in a preheated 475F oven for 15 minutes. Tuck a few carrots sticks and celery ribs into the pan. You want big pieces, so they’ll hold their structure during the long roast. Drizzle a bit of olive oil all over; season with more salt & pepper. Place pan back in oven, and cook for 15 minutes more. Add a handful of parsley (stems & leaves) + 6 cups of water to the pan. Cook for 30 minutes more.
Reduce oven to 275F. Cook for at least 3 hours more, and up 6 hours. I love serving the soup with whole pieces of chicken (the meat will surrender from the bones effortlessly), rice noodles, veggies from the pan, fresh cilantro, and a few squirts of fresh lime juice.
