Had a bunch of ricotta to use up so I made a ricotta lemon cake. Cream sugar, salted butter, and lemon zest. Add egg yolks, then ricotta. Fold in whipped egg whites, followed by cake flour and baking powder. Bake 30 min at 375 F. #cake
