Cry for help! These chicken thighs have been marinating in my fridge with a fairly random assortment of salt, pepper, chipotle chili, Dijon mustard, honey, cumin, garlic powder and olive oil. Should I roast in the oven or cook on the stovetop??
I agree on roasting, but grilling would be great, too. Even a braise on the stove top would be nice, I bet. Brown the thighs in some olive oil. Add some onions, deglaze pan with white wine (if you have it). Let the wine cook a few minutes to burn off the alcohol. Add everything back into the pan, along with some water or stock, and let it simmer until the chicken is cooked through. You could even add rice 20 minutes before its done for a stew-like one pot meal.
