Toss mushrooms with a little olive oil, sprinkle with salt, pepper, and whatever dried herbs you have on hand, then dot with a liberal amount of butter. Roast until soft, then add some fresh herbs of your choice and dig in! Use some crusty bread to soak up all the leftover buttery, umami goodness.

Never thought to put butter chunks on top while roasting - always just use olive oil. Love that!
