#Mushroom #ceviche is one of most popular #vegan offerings--seriously, even the most carnivorous of our guests love it. You'll need a mix of your favorite #mushrooms (#oystermushrooms, #maitake, #cremini all do the trick). Combine them in a bowl with #oliveoil a few whole cloves of #garlic, #salt, and #pepper, toss. Bake at 350 degrees. Put mushrooms and cooking juices in a bowl. Season with fresh #limejuice, #tamari, #ricevinegar, #sesameseedoil. If you can find the #Peruvian #pepper #ajiamarillo, please do throw that in-- look for it in Latin American markets in paste form--if not, seeded #habanero and #jalapeños work just fine. Garnish with #shisoleaf and toasted #wakame. Added #kabocha or #butternutsquash makes for an especially filling (and colorful) dish. #glutenfree
