Make-ahead, on-demand noodle salad: Boil favorite pasta shape half the time the box says, and make a quick Arrabbiata sauce by frying some bacon slivers then cooking tomato paste, red pepper flakes, and canned tomatoes in a bit of the fat. Stir in par-cooked noodles, bacon, and enough pasta water to loosen; cook a few minutes over low heat, stirring, just until the sauce takes to the noodles. Cool then refrigerate. Our design and home editor Amanda Sims warms a few cups of it up to pile over peppery greens like arugula with lots of Parmesan and a squeeze of lemon, for a not sad desk lunch or very quick dinner or whenever the hot-pasta craving strikes.
