Dinner tonight: Spring Soba Soup. Make a base broth by sweating onions, garlic, ginger and arbol chili. Add 2 t turmeric. Add 2 c veg stock and coconut milk, simmer 10ish minutes. Use a spider to take the big chunks out of broth. Add 2 c sliced asparagus and sugar snap peas. Add 1 bundle cooked soba noodles and finish with fresh basil, mint, and a squeeze of lime.
