Buttery salted popcorn grits (grits made from popcorn we popped on the stove) with Cajun shrimp, bell pepper, bacon, shallot, and some fresh chives on top. This dish also features a bit of homemade crawfish stock. First pop lots of popcorn, then simmer lightly in water with butter and press through a fine sieve, retaining the "grits" that come through. Brown bacon, reserve, then brown veggies, add stock and seasoning and bacon, then crawfish. Serve over grits with butter.
